
I bought the least ripe cherries I could at the farmer's market.
4.5 c Cherries, pitted
0.75 c Sugar (evaporated cane juice) * I would use 0.5 c next time
3.5 Tbsp. Cornstarch
0.25 Tsp Almond extract
1 Tbsp. Water
1.5 Tbsp Lemon juice
Crust:
2.5 c Flour
1 c Shortening
1 tsp salt
1 tbsp powdered sugar (vegan)

SO GOOD. OMG. The crust especially...I could just eat a pie made of this crust, with crust filling.
